"Looks like you've had a bit too much to think!" says the Mustachioed THINKPOL officer as he walks up to Winston in a stern voice. Winston must have must have forgotten to hide the disgust and loathing in his eyes, because the large man in black moved closer still, his eyes hiding behind mirrored aviator-styled sunglasses. "You have something to say, sir?" His voice menacing now. "No sir! No." Winston chirps nervously, averting his eyes as much as possible. Very well, then. Let's move along." Since when did large chunks of populations used to eating bread, pasta and other wheat products suddenly suffer from gluten sensitivity? Is it more accurate to call the movement the gluten-free fad or the gluten-free craze? The whole hype surrounding gluten has arisen from the fact the wheat in the USA has been greatly hybridized to increase gluten content. According to some reports, Americans in around the 1950s used to be eating wheat with about a 3% gluten content, and are now eating wheat with about a 50% gluten content. That massive jump has (justifiably) caused concern for many. However, what has mostly come out this has been a large-scale demonization of gluten and demonization of wheat.
