Pancho's fare included tacos, flautas, enchiladas, tamales, rice, refried beans, guacamole and many other traditional Tex-Mex items. One of the well known novelties of the chain was the small Mexican flag at each table that diners would simply have to raise to get service, be it a refill on their drink or another round of sopapillas.
