Sam Wilson made a name for himself during the War of 1812 when he was chosen as the provider of meats to the Army of the United States. His meats became famous far and wide, so much so that his nickname, Uncle Sam, became identified with the government in the minds of the soldiers who enjoyed his fine meats while serving. It only made sense that when a Kansas restaurateur needed a name for his new meat centric establishment, that he would call it Sam Wilson's Meat Market. If the name wasn't a giveaway, Sam's did focus heavily on meat, with the KC Strip, teriyaki steak kabobs, barbecued ribs, chopped steak and the jumbo hamburger all favorite items.
