This is a trio of three Hong Kong dishes involving egg that I absolutely LOVE. Egg tarts, scrambled egg sandwiches, and luncheon meat and egg with instant noodles. Egg tarts are a Chinese bakery staple, and the scrambled egg sandwich with soft silky scrambled egg and noodles are very common in Hong Kong style cafes (cha chaan teng).
